Cyd's Breakfast Pie


1 lb. breakfast sausage
1 can rotel tomatoes
2 C. grated sharp cheddar cheese
4 large eggs
1 can evaporated mile (5 oz)
2 unbaked pie shells


Preheat oven to 375 degrees. Brown sausage, add tomatoes, let cook down a little. Mix in 1 1/2 cups cheese and divide mixture evenly between the pie shells. Mix eggs and milk and pour evenly over the sausage mixture, and top with remaining cheese. Bake for 40-45 minutes until center of each pie is set. You can make this recipe as "spicy" as you'd like, use hot sausage, hot rotel, or even pepper jack cheese in place of cheddar cheese, do a little or a lot what ever suits your taste!
